Smoked chicken sandwich with mustard mayo

The smoked chicken sandwich with mustard mayo brings together fried bacon and tomato slices between two slices of whole wheat bread. The horseradish and Worcestershire sauce ties the filling together, while the tomato keeps the middle juicy. I go for thin slices of smoked chicken breast so they’re evenly distributed in every bite. Prep: 5 minutes. Cook: 5 minutes. Total: 10 minutes. Serves: 1. About 450 kcal and 29 g protein per serving.
Ingredients
- 2 slices whole wheat bread
- 70 g sliced smoked chicken breast
- 2 strips bacon
- 1 small tomato (100 g)
For the mustard mayo
- 1 tablespoon mayonnaise
- 1 teaspoon prepared horseradish
- 1 teaspoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
Preparation
1. Fry the 2 strips of bacon in a pan over medium heat for 5 minutes, until crisp. Drain off the oil. 2. Mix 1 tablespoon of mayonnaise with 1 teaspoon of prepared horseradish, 1 teaspoon of Dijon mustard and 1/2 teaspoon of Worcestershire sauce until smooth. 3. Spread sauce on one side of each slice of bread. Put the smoked chicken breast, sliced tomato and bacon on one slice, then cover with the other slice, sauce-side down.
Notes
Whole wheat bread contains gluten, and regular mayonnaise contains egg. Instead of classic bacon, I used vegan strips made from algae, fried and drained of oil. Choose thinly sliced smoked chicken breast; if the pieces are thick, cut them lengthwise before adding them to the sandwich. Blot the tomato if it releases a lot of juice, so the bread doesn’t get soggy. Assemble just before eating and serve with pickles and a cup of black tea.
Frequently asked questions
Can I use cooked chicken breast that isn’t smoked?
Yes. Use 70 g of roasted chicken breast and add 1/4 teaspoon of smoked paprika to the sauce.
What can I use instead of prepared horseradish?
Use 1/2 teaspoon of freshly grated horseradish and 1/2 teaspoon of water, then mix the sauce well.
How can I make the bread crispier?
Toast the slices in a dry pan for 1 minute on each side before spreading them with sauce.
