Walnut and Soy Waffles

To prepare delicious waffles from oatmeal flakes and soy paste, it is essential to ensure that we use fresh and quality ingredients. We start with soybeans, which we will soak for 8-12 hours. This process helps activate enzymes and improves digestibility. After soaking, we drain the beans and put them in a blender with a little water. We grind until we obtain a fine and homogeneous paste. It is recommended to prepare a larger quantity of soy paste, which we can portion and store in the freezer for future use. We continue with the oatmeal flakes. In a large bowl, we add the 2 cups of oatmeal flakes, which will give the waffles a pleasant texture and a special flavor. To this base, we add the previously obtained soy paste. It is important to mix the ingredients well so that they combine perfectly. If we want a softer mixture, we can gradually add water or soy milk until we achieve the desired consistency. After obtaining a homogeneous mixture, we heat the waffle grill. It is recommended to preheat it well to ensure even cooking. When the grill is ready, we pour in the oatmeal and soy mixture, being careful not to overfill, as the waffles will expand during cooking. We leave the waffles on the grill until no more steam comes out, indicating that they are fully baked and ready to enjoy. These waffles are delicious and very filling, ideal for a healthy breakfast or a snack between meals. After baking, we can store them in the freezer, and when we want to consume them, we can reheat them either in the oven or in the toaster. This way, we enjoy warm and crispy waffles, full of nutrients. This dish is not only tasty but also an excellent source of energy, perfect for an active day. Experiment with various toppings, such as fresh fruits, maple syrup, or nut butter, to add an extra flavor. Regardless of your choice, oatmeal and soy paste waffles will surely become a favorite in your daily diet.

- 4 cups of water
- two packets of vanilla
- a few pitted dates (depending on how sweet we want the waffles
- I used about 11
- they were moderately sweet)
- 1 cup of walnut meat
- 1/2 cup of soy pulp (left after processing soy milk in the special machine)
- 3/4 cup whole wheat flour
- 3/4 cup corn or millet flour
- a handful of mung bean sprouts (this ingredient can be omitted)
- 1 teaspoon salt
