We start preparing this delicious cheesecake with cherries by preheating the oven to 160 degrees Celsius (or 140 degrees for gas). It is important to ensure that the temperature is set correctly, as even baking will influence the final texture and taste of the cake. While the oven is heating up, we take care of preparing the loaf pan. We thoroughly grease the inside with butter, making sure that there will be no unpleasant sticking. Then, we line the bottom and sides of the pan with a sheet of parchment paper, so that the cake will easily come out after baking. Next, we focus on the dough. We put the necessary ingredients in the mixer bowl and start kneading until the dough reaches a consistency similar to peanut butter. This is an essential step to achieve a delicious and flavorful base that will support the filling. Once the dough is ready, we evenly spread it on the bottom of the loaf pan, pressing it lightly to secure it. Next, we concentrate on the filling. We mix the cheese with vanilla and sugar, using a spatula or mixer, until we obtain a smooth, homogeneous paste that will give the cake a sweet and delicate flavor. After achieving this consistency, we gradually incorporate the flour and eggs, mixing well to avoid lumps. Once the mixture is homogeneous, we carefully pour it over the dough in the pan, leveling it with a spatula to create an even surface. The cake bakes in the oven for about an hour, until the edges become slightly brown and the filling is almost fully cooked. It is important to let it cool in the pan, and then transfer it to the refrigerator to cool completely, which will contribute to a perfect texture. While the cake is cooling, we dedicate ourselves to the cherry topping. In a pan, we add the sugar and caramelize it over high heat, being careful not to burn it. Once the sugar turns golden, we add the cherries and sauté them for 3-4 minutes, until they become sticky and filled with flavor, without completely softening. We let the resulting liquid drain and then reduce it in the pan until it becomes a thick and flavorful syrup. When the cake is completely cool, we carefully remove it from the pan and transfer it to a serving platter. We let it sit at room temperature for 30 minutes to develop its flavors. Just before serving, we add the caramelized cherries on top and pour the formed syrup, creating a contrast of textures and flavors. We cut the cake into slices and serve it with joy.
