Stefania's Dream Salad

Well-dried lettuce leaves stay crisp; Stefania's Dream Salad pairs them with tomatoes, spring onions, stuffed olives and cheese. It makes a fresh starter, with tender leaves and salty pieces of cheese and olives. I leave the lettuce strips fairly wide so they’re easy to pick up with a fork. Prep: 20 minutes. Cook: 0 minutes. Ingredients
- 2 medium tomatoes (300 g)
- 1 lettuce (250 g)
- 1 bunch spring onions (50 g)
- 100 g green olives stuffed with red peppers
- 150 g cheese
- 1/4 teaspoon salt
- 30 ml oil
Preparation
1. Wash and dry the tomatoes and lettuce well. Dice the tomatoes and cut the lettuce into strips. 2. Cut the spring onions into bite-size pieces, the olives into rings and the cheese into cubes. 3. Put everything in a bowl. Add 1/4 teaspoon salt only if the cheese isn’t salty, then pour in 30 ml oil and toss. 4. Serve the salad as a starter.
Notes
The salad keeps better if you toss it just before serving; the leaves and chopped vegetables can be kept separately in the fridge for a few hours. You can replace the olives stuffed with red peppers with plain green olives, in the same quantity. The cheese and olives may already be salty, so taste them before adding salt. Meaty tomatoes release less juice into the bowl; if they’re very juicy, remove the seed part before cutting them. Dry the leaves well after washing, otherwise water will collect at the bottom of the bowl. I take my time cutting the spring onions: I use the green parts too, in pieces that are easy to pick up with a fork. Drain the olives from the jar before slicing them. Serve the salad with slices of fresh bread.
