Mexican Vegetables in the Roman Pot

Salad - Mexican Vegetables in the Roman Pot by Aureliana M. - Recipia

The Roman pot is a wonderful culinary tool, ideal for preparing delicious and healthy meals with minimal effort. The first step is to soak it in water for an hour to properly hydrate. This will help maintain moisture during cooking, ensuring that the vegetables and other ingredients cook evenly and remain juicy. After the time has passed, we drain the pot and prepare to add the ingredients. We start by adding frozen vegetables to the Roman pot. These can include carrots, peas, corn, or a mix of vegetables, depending on your preferences. Frozen vegetables are very convenient as they require no peeling or chopping, and their flavor remains fresh due to the freezing process. Once we have added the vegetables, we pour in olive oil, which will not only add flavor but also help cook the ingredients evenly. Tomato juice is the next ingredient on our list. It will provide a rich and flavorful sauce that will bind all the flavors together. We season the mixture with Delikat, freshly ground pepper, and if desired, we can add crushed or granulated garlic for an extra kick of flavor. Garlic brings an unmistakable aroma that pairs perfectly with the vegetables, giving the dish a distinct character. After adding all the ingredients, we put the lid on the pot and place it in the preheated oven at a medium temperature. It is important to ensure that the Roman pot is well covered to retain moisture and allow the ingredients to cook slowly and evenly. Halfway through the cooking time, which will last about an hour, we can add the rice, stirring well to incorporate it into the delicious sauce. If we notice that the mixture is too dry, we do not hesitate to add a bit of water to achieve the desired consistency. Finally, when the cooking time is over, we carefully remove the pot from the oven, being cautious of the hot steam that will be released. The dish is now ready to be served, and the combination of vegetables and rice will create a nutritious and flavorful meal. We recommend serving this delicacy alongside a salad of pickled cabbage or various pickles, which will add a pleasant contrast of freshness and acidity. Enjoy your meal!
