White sausages with pan-fried vegetables

White sausages with pan-fried vegetables: the pieces are browned and served with zucchini, peppers, boiled carrots and kidney beans. The vegetables soften and keep a little juice nestled between them, while the beans and carrots make the panful hearty enough for a whole meal. With the sausages, I pay close attention to how evenly they brown, not just the color on one side. Preparation: 15 minutes. Cooking: 33 minutes. Total time: 48 minutes. Servings: 3. Approximately 670 kcal and 22 g protein per serving.
Ingredients
- 1 pair white sausages (300 g)
- 1 medium onion (150 g)
- 4 tablespoons oil
- 2 kapia peppers (300 g)
- 1 zucchini (250 g)
- 4 boiled carrots (300 g)
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon mustard seeds
- 240 g canned kidney beans (drained)
- 10 g chopped celery leaves
Preparation
1. Peel the onion and chop it finely. Wash the peppers and cut them into strips. Peel and seed the zucchini, then cut it into cubes. Drain the boiled carrots and canned beans well. 2. Cut the sausages into pieces and score them. Fry them in a nonstick pan over medium heat for about 8 minutes, turning them until they are browned and cooked through. Transfer them to a plate. 3. Add 4 tablespoons of oil and the onion to the same pan. Cook for 5 minutes, until softened. 4. Add the peppers and cook them with the onion for another 5 minutes, stirring now and then. The strips soften but hold their shape. 5. Add the zucchini and carrots to the pan. Add 1 teaspoon salt, 1/2 teaspoon ground pepper and the mustard seeds. Cover and simmer over low heat for 12 minutes, until the zucchini softens and most of the liquid has reduced. 6. Add the drained beans and stir gently. Cook for 3 more minutes, until heated through, then scatter over the chopped celery leaves. Serve the vegetables with the sausage pieces.
Notes
Choose sausages of a similar thickness. Thicker ones may need another 2-3 minutes to cook through. A watery zucchini may still release liquid after 12 minutes. Uncover the pan and cook over low heat for another 2-3 minutes, until the liquid is no longer pooling. Drain carrots taken from soup well before adding them to the pan, or they'll add water among the vegetables. Canned beans may already be salted, so taste the mixture before adding more salt at the table. Store the dish in a covered container in the fridge for up to 3 days. Reheat only the portion you plan to eat. I serve it with fresh bread, so I can mop up the juice left among the vegetables. You can replace the kidney beans with 240 g well-drained canned white beans. If the beans are very soft, fold them in carefully at the end so they stay whole.
Frequently asked questions
Can I leave the zucchini skin on?
Yes, if it is small and has tender skin. Cut it into cubes about 2 cm across.
What can I use instead of celery leaves?
Use 10 g chopped parsley instead, adding it at the end as well.
Can I use regular bell peppers instead of kapia peppers?
Yes, use 2 medium bell peppers. Cut them into strips and cook them until softened.
How deep should I score the sausages?
Make shallow cuts, about 2 mm deep, so you don't cut the pieces halfway through.
