Mixed ice cream: vanilla, chocolate flakes, and citrus

The ice cream maker's bowl must be placed in the freezer for at least 8 hours before starting the ice cream preparation process. The first step is to deal with the eggs; carefully separate the egg whites from the yolks, ensuring no egg white remains, as it will not be used in the recipe. The yolks are vigorously whisked with sugar and a pinch of salt until the mixture becomes frothy and changes to a lighter, even bluish color. This process is essential for achieving a smooth and creamy texture for the ice cream. In another pot, bring the milk to a boil, adding the seeds from a vanilla pod, as well as the whole pod, to enhance the flavor. Once the milk has begun to boil, let it cool slightly until it becomes warm, but not hot. With one hand, pour the warm milk in a thin stream over the yolk mixture, continuously stirring to prevent the eggs from curdling. This step is crucial as it ensures the eggs will blend evenly with the milk, forming a delicious cream. The resulting cream will be cooked in a double boiler, stirring constantly until it starts to thicken slightly. After reaching the desired consistency, remove it from the heat and let it cool. Afterwards, divide the cream into three equal parts. The first part remains plain, with the pure vanilla flavor. In the second part, add grated lemon zest, a teaspoon of lemon juice, and some candied orange peel along with a splash of the syrup released from it. In the third bowl, grate dark chocolate, ensuring it is added only after the egg cream has cooled down to avoid melting. In another container, whip the cream for the whipped cream, ensuring a softer consistency that will add extra airiness to the ice cream. Then, add the whipped cream to the three mixtures, mixing well with a mixer until everything is homogeneous. The resulting cream is poured into the ice cream maker's bowl, which will mix the ingredients for 15 to 30 minutes, depending on the model used. If you do not have an ice cream maker, do not worry! The cream can be placed in the freezer, and every 30 minutes, it should be taken out and stirred to prevent ice crystals from forming until it reaches the desired consistency. The total preparation time is about an hour and a half, and the ice cream can be served with wafers for a contrast of textures. Enjoy!
