Pancakes Wrapped in White Chocolate with Vanilla Cream

Desert - Pancakes Wrapped in White Chocolate with Vanilla Cream by Atena C. - Recipia

To start this delicious recipe for white chocolate pancakes with vanilla cream, the first steps are essential. In a pan, we melt the butter over low heat, making sure it doesn't burn, but becomes liquid and fragrant. In a large bowl, we combine the dry ingredients: flour, vanilla sugar, the 2-3 tablespoons of cocoa, and a pinch of salt. It is important to sift the mixture once to achieve a fine and even texture, without lumps. In another bowl, we mix the two eggs with the milk, vanilla essence, and melted butter. We thoroughly homogenize these liquid ingredients, then pour the mixture over the dry one. Using a whisk or mixer, we mix well until we obtain a uniform batter. If you find the batter too thick, do not hesitate to gradually add milk to reach the desired consistency. We prepare the pancake pan, greasing it with a paper towel or a sponge soaked in oil, doing this after each pancake to prevent sticking. With a ladle, we pour the batter into the center of the pan, ensuring we have an even portion. We let the pancake cook for about a minute over medium heat until we see bubbles on the surface, then we carefully flip it to the other side. We repeat the process until we finish the batter. For the vanilla cream, in a small pot, we put the liquid cream for whipping, milk, and the two tablespoons of vanilla essence. We bring the mixture to a high temperature, but without letting it boil. In a separate bowl, we mix the eggs, sugar, salt, and flour until we obtain a homogeneous mixture. When the mixture in the pot becomes hot, we carefully pour it over the egg mixture, stirring continuously to avoid curdling the eggs. We then bring the mixture back to low heat for about 5 minutes, stirring constantly with a whisk until it thickens. After the cream has cooled, we move on to the step of melting the white chocolate. Using the bain-marie method, we ensure that the chocolate melts evenly without burning. While the chocolate melts, we prepare the pancakes by trimming the edges to make them more uniform and visually appealing. We roll each pancake and cut the ends for a pleasant aesthetic effect. From baking paper, we cut squares the size of the pancakes. We fill the pancakes with the vanilla cream and roll them up, then place them on the paper painted with chocolate. With a piping bag and a thin nozzle, we decorate the paper with the melted chocolate, letting our imagination create various shapes. After 2-3 minutes in the fridge, the chocolate will harden slightly. We place the pancakes on the paper, leaving them to cool in the freezer for 10 minutes or alternatively 2-3 hours to ensure the chocolate is well hardened. When we take them out of the fridge, we carefully remove the baking sheets. The final result is wonderful, delicate, and extremely delicious pancakes, perfect to be enjoyed with loved ones!
