Ingredients

  • 500 g cucumbers
  • 1 large red onion (200 g)
  • 1 yellow bell pepper (150 g)
  • 15 g parsley
  • 1 teaspoon salt

  • 70 ml white wine vinegar
  • 50 ml sunflower oil
  • 2 tablespoons sugar

Preparation

1. Cut the cucumbers into diamonds, the red onion into julienne strips, and the yellow bell pepper into small cubes. Put them in a bowl. 2. Chop the parsley and add it to the vegetables. Add the salt, pepper, white wine vinegar, sunflower oil, and sugar, then toss. 3. Cover the bowl and refrigerate the salad for at least 60 minutes.

Look for firm cucumbers with smooth skin; very large ones often have more developed seeds and can be watery. If the skin is bitter, peel it in thin strips, without peeling down to the flesh. I chill it an hour before the meal, and when I make a larger batch, I keep the same proportions. Serve it alongside roast pork, beef, or lamb. It keeps covered in the fridge for up to 3 days, although the cucumbers gradually soften as they sit.
