After a few weeks of heavy meat at the main meals, I felt the need to prepare something lighter, just with vegetables. I have made this recipe several times, especially when I want to let the ingredients keep their natural taste. It also seems to me one of the simplest cooking options with Zepter, without complicated steps and without having to stand by the stove. Wash and peel all the vegetables. Break the broccoli and cauliflower into smaller florets so they cook evenly. Peel and slice the carrot into not too thin rounds. Remove the seeds from the bell pepper and slice it. Wash the zucchini well, usually I don’t peel it, and slice it. 2. Arrange the vegetables in a Zepter pot, each in a layer or "artistic" as each prefers, without mixing them too much. I do not add extra water; they remain juicy from their own moisture. 3. Sprinkle iodized salt, a little thyme, and freshly ground pepper. If I sometimes make it for kids, I put less salt. 4. Put the lid on and place the pot on low heat. I keep the pot on the heat until the temperature control reaches the green zone (about 15 minutes). I do not open the lid during this time to avoid losing steam. 5. When the temperature control needle is in the green zone, I turn off the heat completely. I leave the pot covered, without lifting the lid, for another 30 minutes until the indicator reaches the brown zone. During this time, the vegetables cook slowly without heat. 6. When I open the lid, the vegetables are slightly crunchy but well cooked and with a clear taste. They do not lose their texture or color. Why I make this recipe often I like to prepare it because it is quick, does not require constant attention, and you do not need many ingredients or spices. The vegetables come out crunchy enough, do not turn to mush, and retain their taste. If I have leftovers, I can quickly place them alongside other dishes.
