Pumpkin Gnocchi Filled with Gorgonzola

To prepare these delicious pumpkin and cheese dumplings, we start by preparing the necessary ingredients. The pumpkin should be fresh and of good quality, so that we obtain a flavorful and fine pulp. We cut the pumpkin into slices, taking care to remove the seeds and fibers between them. We place the pumpkin slices on a baking tray lined with parchment paper, and then we put them in the oven. It is important to check the pumpkin slices from time to time to ensure they do not burn. Oven temperatures can vary, so it is recommended to set the heat to medium, so that the flesh of the pumpkin becomes soft, almost like a paste, easy to mash with a fork. Once the pumpkin is baked, we take the tray out of the oven and let it cool a little. Using a spoon, we extract the pulp from the burnt skin, discarding any burnt parts. Then, we mix the mashed pulp with the flour, salt, and nutmeg. It is essential to obtain a dough that is quite sticky, but be careful not to overdo it with the flour, as we want the dumplings to have the authentic taste of pumpkin and not of flour. On a floured surface, we place the dough using a spoon. In the middle of each portion, we place a small cube of cheese, about 1 cm. With the help of the spoon, we add a little dough on top of the cheese and close the edges as best as we can, so that the cheese stays inside the dumpling. We gently twist with the palm of our hand, without pressing too hard, to form a perfect dough cylinder. After we have finished preparing all the dumplings, we boil them in a pot of salted water that is boiling. It is important to simmer them, and they are ready when they rise to the surface on their own. Once they are boiled, we take them out with a slotted spatula and transfer them to a pan where we have melted a little butter. If desired, add some cheese cubes, mixing carefully, moving the pan to coat them evenly. These delicious pumpkin and cheese dumplings are now ready to serve, and their inviting aroma will surely delight everyone who tastes them. Enjoy them hot for an unforgettable culinary experience!
