To prepare a delicious and hearty soup, we need a few essential ingredients that we can prepare in advance and keep in the freezer. We start by finely chopping the onion, carrots, and white root, which we will slice carefully, ensuring that the sizes are uniform for even cooking. The tomatoes, peeled with a sharp knife, bring a note of freshness and a sweet-sour taste, while the bell pepper, cut into slices or small pieces, complements the flavor palette. The kohlrabi, finely chopped, will add a crunchy texture and a slightly sweet taste. After preparing all these vegetables, we pack them separately in plastic wrap, ensuring they are well sealed to prevent freezing. Then, all these packaged vegetables will be placed in a plastic bag, which we will label with the date and contents. It is important to be well organized, as these preparations can be kept in the freezer for up to a year, being an excellent solution for days when we do not have much time to cook. When we want to prepare our soup, we take the vegetables out of the bag one by one. We start with the onion, which we sauté in a pot with hot oil, being careful to stir constantly to prevent it from sticking. The aromas that are released are simply irresistible. After a few minutes, we add the kohlrabi, which will combine perfectly with the onion. Next, we take out the carrots and the white root, which we will add to the pot to steam a little, thus enhancing their flavors. Now it is time to add the bell pepper and the rest of the vegetables, mixing everything carefully. Subsequently, we will pour water over the vegetable mixture and let it boil. It is essential not to defrost the vegetables beforehand; cooking them directly from the freezer will keep all the nutrients and flavors intact. After the soup has boiled and all the vegetables have become tender, we add the finely chopped parsley for an extra touch of freshness. The soup can be served with a spoonful of sour cream, which will add a special creaminess. For those who want an extra consistency, they can add small pieces of meat to the pot in which the soup is boiling, thus transforming it into a heartier dish. This soup is not only comforting but also full of vitamins, making it ideal for cold days or when we need an energy boost.
