Chickpea Pâté (Vegan)

Chickpeas are an extremely versatile and nutritious legume, ideal for preparing various recipes. We start by soaking the chickpeas in cold water, preferably from evening until morning. This step is essential as it hydrates the beans and reduces cooking time. The next day, we drain the chickpeas and put them to boil in a pot with fresh water. We let them boil over medium heat until they become soft but not overcooked, to maintain their consistency. Once boiled, drain the water but keep a little of it, as it will be useful for adjusting the texture of the mixture. After the chickpeas have cooled slightly, we use an immersion blender to crush them. It is important to achieve a fine and homogeneous paste. If you notice that the paste is too thick, gradually add some of the water in which the chickpeas were boiled, mixing continuously until you reach the desired consistency. While preparing the chickpea paste, we take care of the onion. We peel the onion and chop it finely, then sauté it in a pan with a little oil. It is important to sauté it over low heat so that it becomes transparent and releases its flavors without burning. Once the onion is ready, we add it directly to the chickpea paste, along with the oil in which it was sautéed, to enhance the flavor. We season the obtained paste with salt, pepper, vegetable seasoning, and thyme. The amount of spices can vary according to personal preferences, so it's good to taste along the way. Mix the ingredients well to perfectly integrate them. At the moment the mixture is well homogenized, add the oil in a thin stream, similar to making mayonnaise. Continuously mix so that the oil is evenly incorporated, giving a creamy texture and rich flavor to the chickpea paste. This simple recipe can be used as a base for various dishes, from delicious spreads to fillings for vegetables or as a dip for various appetizers. Experiment with different spices and add them according to personal preferences. This dish is not only tasty but also healthy, having a high content of protein and fiber, ideal for a balanced diet.
