Romanian potato and beet ciorbă

Romanian potato and beet ciorbă (ciorbă de cartofi cu sfeclă roșie) simmers with carrot and onion, while the beet turns the broth a deep red. The potatoes soften in the red broth, and the spoonful of oregano in vinegar gives it a tangy note; it’s good cold too. I prefer it cold, when the lovage aroma comes through. Preparation: 20 minutes. Cooking: 41 minutes. Resting: 5 minutes. Total time: 66 minutes. Servings: 4. Approximately 290 kcal and 5 g protein per serving.
Ingredients
- 400 g beetroot
- 1 medium white onion (150 g)
- 3 medium carrots (180 g)
- 4 tablespoons oil
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 2000 ml water
- 500 g potatoes
- 1 bay leaf
- 1 tablespoon oregano in vinegar
- 15 g fresh dill
- 15 g fresh lovage
Preparation
1. Peel and wash the vegetables. Finely chop the onion, grate the carrots, finely chop the beet in a food processor, and cut the potatoes into roughly 2 cm cubes. 2. Heat the oil in a pot over low heat. Cook the onion and carrots for 6 minutes, until the oil takes on a golden hue. 3. Add the beet, salt and pepper, then pour in the cold water. Simmer over medium heat for 20 minutes, until the beet softens. 4. Add the potatoes and bay leaf to the pot. Simmer for another 15 minutes, until the potatoes are tender. 5. Turn off the heat and add the oregano in vinegar, the chopped dill and lovage. Let the soup stand for 5 minutes, then serve it hot or cold.
Notes
Keep the soup covered in the fridge for up to 3 days. If you want to change up the herbs, you can replace the lovage with another 15 g of dill. Choose firm beets with smooth skin; a more fibrous one may take a little longer to cook. Don’t rush the vegetables at the start: if the beet still resists a fork, leave it a little longer before adding the potatoes. Oregano in vinegar can vary in strength, so stir it in gradually and stop when the soup is tangy enough. Rye bread goes well with a cold bowl.
Frequently asked questions
Can I use new potatoes?
Yes. Cut them into roughly 2 cm cubes and start checking them after 12 minutes, as they soften quickly.
Can I use cooked beet?
Yes, use the same 400 g and add it when the potatoes are nearly tender. Let it simmer for 5 minutes, just to heat through.
What can I use instead of oregano in vinegar?
Mix 1/2 teaspoon dried oregano with 1 teaspoon vinegar and add the mixture at the end.
What should I do if the potatoes are still firm?
Simmer the soup for another 5 minutes at a time, then check a larger cube again. Older potatoes may need extra time.
