To prepare sweet corn in milk, the first step is to remove the corn cobs from the husks and the silks that cover them. It is important that the corn is fresh and ideally in milk, as this will add flavor and sweetness to the final dish. Detaching the corn kernels may seem like a laborious process, but there is a simple method to streamline this step. Start by taking a sharp knife and, from one end to the other of the cob, carefully cut three rows of kernels. Use the tip of the knife to perform this operation, being careful not to damage the kernels. Once you have made the cuts, use your thumb to detach the kernels from the cob, directing them towards the empty part of it. This way, you will be able to obtain intact and beautiful kernels, ready to be boiled. After you have obtained all the kernels, it is time to boil them. Fill a pot with water and bring it to a boil. Add salt and sugar to the water, making sure to respect the proportions to achieve a balanced taste. Boil the corn kernels in the boiling water for about 5-7 minutes, just enough to soften them slightly, but without making them too soft. After boiling, drain them well. Let the kernels cool completely before portioning them. Use freezer bags; ideally, you should have bags with a sealing system to keep them fresh. If you can't find such bags, it's not a problem, you can use two bags for each portion. Flatten the contents of the bags, removing as much air as possible; this step is essential to prevent ice crystals from forming. It is recommended to vacuum seal the bags if you have a vacuum sealer available. After sealing the bags, date them so you will know exactly when each portion was prepared. Place the bags in the freezer, ensuring they are separated, meaning they should not be stacked on top of each other, to allow for even freezing. Leave them in the freezer until the next day so that they freeze well. Once frozen, organize them in the freezer as you wish, so you can easily access them when needed. These corn kernels will be a wonderful ingredient for various dishes, bringing a sweet and fresh taste to any meal.
