Choosing the right tomatoes is essential for achieving a delicious and satisfying result. Start by washing the tomatoes under a stream of cold water, ensuring you remove any impurities. After washing, dry them with a paper towel to eliminate excess water. This step is important as it helps achieve even dehydration. Once prepared, cut the tomatoes in half lengthwise, from stem to tip. Carefully arrange them in an enameled tray, making sure to place them cut-side up and leaving a small space between each tomato. This will allow warm air to circulate around them, contributing to even dehydration. Sprinkle a pinch of salt and pepper on each tomato to enhance their flavor during the baking process. Place the tray in the middle of the oven, setting the temperature to the minimum (around 100 degrees Celsius). It is important to have another empty enameled tray on the lower rack of the oven. This will act as a shield against direct heat, thus protecting the tomatoes from rapid dehydration or burning. Check the progress of the tomatoes every 30 minutes. The total baking time can vary between 3 and 6 hours, depending on the size of the tomatoes. The tomatoes are ready when they become flexible, with a texture similar to raisins, without being completely dry or hard. It is normal for some of them to brown slightly at the edges; this will not affect their quality, just their appearance. Once cooled, gather the tomatoes and pack them tightly in zip bags to protect them from air and moisture. These bags are perfect for freezing, and the dehydrated tomatoes can be stored in the freezer for up to 12 months, allowing you to enjoy their fresh taste in various dishes, even in the cold season. This simple method will allow you to preserve your harvest and bring a touch of summer to your plate throughout the year.
