It is important to do this in a bain-marie or over very low heat, stirring constantly to avoid burning. Once the chocolate and butter are completely melted and the mixture is homogeneous, let it cool slightly. Meanwhile, we take care of the eggs. Separate the yolks from the whites and mix the yolks with the sugar until they achieve a creamy texture and a lighter color. It is essential that the sugar is well incorporated to obtain a fluffy cake. After mixing well, sift in the flour, which will give the desired structure to the cake. Mix with a spatula or mixer, but at a low speed, until you get a homogeneous composition. In another bowl, beat the egg whites until they become firm and shiny. This step is crucial to give the cake an airy texture. Once the egg whites are beaten, they will be carefully incorporated into the chocolate and yolk mixture. It is important to mix from the bottom up using a spatula to avoid losing the air from the egg whites. Next, we prepare the cake pan, which has a diameter of 24 cm. Grease it with butter, ensuring it is evenly covered, then sprinkle with flour so that the cake does not stick. Pour the obtained mixture into the prepared pan, leveling it with a spatula to achieve a smooth surface. With the oven preheated to 170-180 degrees Celsius, place the pan on the middle rack and bake the cake for 20-25 minutes. It is important to check with a tester or toothpick, as baking time may vary depending on the oven. Once the cake is baked, it is recommended to let it cool in the pan for a few minutes, then transfer it to a rack to cool completely. This chocolate cake is perfect to be served plain, but it can be decorated with whipped cream, fresh fruits, or chocolate sauce, depending on everyone's preferences. Enjoy each slice!
