Rice pudding with berry sauce

Rice pudding with berry sauce is first cooked in water, then in milk, and served with berry sauce. The grains soften until tender and hold together, with a gentle hint of lemon and orange zest; the sauce goes on top only when serving. For me, it tastes of childhood, and now I make it for Maria too. Prep: 5 minutes. Cook: 34 minutes. Rest: 0 minutes. Total: 39 minutes. Serves: 3. About 390 kcal and 7 g protein per serving.

Ingredients

  • 180 g rice
  • 200 ml water
  • 200 ml milk
  • 1 teaspoon grated lemon zest
  • 1 teaspoon grated orange zest
  • 12 g sugar

For the sauce

  • 300 g frozen berries
  • 30 ml water
  • 38 g sugar
  • 15 ml rum

Preparation

1. Rinse the rice under running water and bring it to a simmer with 200 ml of water over low heat for 12 minutes, until the grains are almost tender. Drain off any remaining water. 2. Add the milk, grated lemon and orange zest, and sugar. Simmer over low heat for 12 minutes, stirring, until the rice is tender and the mixture is creamy. 3. Put the frozen berries in a small saucepan with the water, sugar, and rum. Simmer for 10 minutes, stirring now and then, until the sauce thickens and turns glossy. 4. Serve the rice with a teaspoon of berry sauce on each portion.

Notes

Round- or medium-grain rice makes the mixture more cohesive; with long-grain rice, the grains stay more separate. The part I never rush is stirring the rice in the milk, because it settles quickly on the bottom of the saucepan. Frozen berries can go straight into the saucepan, and if they’re stuck together in a block, break them up a little before putting them on the heat. If the sauce seems thin when you take it off the stove, it will thicken as it cools. The milk can be replaced with 200 ml of oat drink; if you keep the milk, the dessert contains dairy. A cup of black tea goes well alongside. Keep the dessert covered in the fridge for up to 3 days.

Frequently asked questions

What should I do if it has thickened too much after cooling?

Stir 30 ml of warm milk into each portion just before serving.

Can I use brown rice too?

Yes, but simmer it in water for about 35-45 minutes before adding the milk; the grains will stay firmer.

Can I use fresh berries for the sauce?

Use 250 g of berries and 20 ml of water, then simmer the sauce for about 8 minutes, until it starts to thicken.

Why does the rice stick to the bottom of the saucepan?

A heavy-bottomed saucepan heats more evenly; stir from the edges towards the centre every 2 minutes.

What should I do if the rice is still hard after the milk has reduced?

Add 50 ml of warm milk and simmer for another 5 minutes over low heat.
