First, we carefully clean the trout, ensuring that all the entrails and scales are removed. Once we are done, we wash it well under cold running water and dry it with a paper towel to remove excess water. In a non-stick pan (without oil or other fats), we heat the pan over medium heat, then place the trout skin-side down. This method will help achieve a crispy crust while keeping the flesh tender and juicy. We let it fry for about 5-7 minutes, until the skin turns golden and crispy, then carefully flip it to the other side and let it cook for a few more minutes. Meanwhile, we take care of the side dish. The potatoes can be prepared either in the microwave or by boiling, depending on your preferences. If you opt for the microwave method, cut the potatoes into cubes and cook them until they become soft. Once cooled, slice them thinly. Pre-cooked beetroot provides a color and flavor contrast. We slice it and combine it with the sliced potatoes. We season the mixture with salt, a little olive oil, and, if desired, a splash of vinegar to add a note of acidity that will perfectly contrast with the sweetness of the beetroot. The green salad is another essential component of this dish. We wash the salad leaves, dry them well, and cut them into large pieces. We season with salt and olive oil, gently mixing to avoid tearing them. To complete the meal, we will prepare a refreshing tzatziki sauce. We chop a cucumber into small cubes, which we mix with crushed garlic or garlic powder, as preferred. We add natural yogurt, a teaspoon of salt, and fresh or dried dill, mixing everything well.
