Braided homemade bread

Pasta/Pizza - Braided homemade bread by Anda N. - Recipia

Braided homemade bread is served alongside soup or stew; the crust browns nicely, while the crumb stays soft. The yeasted dough, made with flour, yeast and water, is divided in two, braided and brushed with egg and oil; the sesame on top is optional, and the slices have uneven edges. I like it sliced fairly thick, so it holds up well alongside soup. Prep: 25 minutes. Cook: 35 minutes. Rest: 85 minutes. Total time: 145 minutes. Servings: 12. About 395 kcal and 9 g of protein per serving.

Ingredients

  • 1 kg flour
  • 50 g fresh yeast
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 575 ml lukewarm water
  • 6 tablespoons oil
  • 1 egg
  • 1 tablespoon oil
  • 1 tablespoon sesame seeds (optional)
  • 2 tablespoons oil for the pans

Preparation

1. Sift 1 kg of flour into a large bowl. In a cup, mash the yeast with the sugar, then add 30 ml of lukewarm water and 16 g of flour taken from the prepared amounts. Leave the mixture for 10 minutes, until it starts to rise. 2. Add the salt to the sifted flour. Add 545 ml of lukewarm water and 6 tablespoons of oil, then the yeast mixture. Knead until the dough no longer sticks to your hands. 3. Cover the bowl and leave the dough to rise in a warm place for 1 hour, until it has visibly increased in size. 4. Grease two pans with 1 tablespoon of oil each. Turn the dough out onto a floured work surface and divide it in two. Cut each half into two pieces, roll them into ropes and braid them in pairs. Put the loaves in the pans and leave them for 15 minutes. 5. Beat the egg with 1 tablespoon of oil and brush the loaves. Sprinkle 1 tablespoon of sesame seeds on top, if using. Bake in a preheated oven at 180°C for 35 minutes, until the loaves are browned.

Notes

Serve the slices with fried eggs or use them for sandwiches. Once cool, store the bread in a bread bag and eat it within 3 days; leftover slices can be frozen. White bread flour is easier to knead than wholemeal flour, which absorbs more water and makes the dough heavier. The water should be just lukewarm, not hot. If the yeast mixture shows no signs of rising after 10 minutes, the yeast may be inactive. The sesame can be left out, and the bread contains gluten and egg.

Frequently asked questions

Can I use dry yeast?

Yes, use 17 g of dry yeast instead of 50 g of fresh yeast and mix it with the flour.

Can I make four smaller loaves?

Yes. Divide the dough into four and shorten the baking time to about 25-30 minutes at 180°C.

Why does the bread need to cool before slicing?

The crumb is still setting after the bread comes out of the oven. Let it cool for at least 45 minutes so the slices don't get squashed.

What should I do if the sesame browns too quickly?

Loosely cover the loaves with aluminum foil after 25 minutes and continue baking.
