Ricotta Cake

To prepare this delicious ricotta cake, the first step is to carefully separate the egg whites from the yolks. It is essential to have a clean bowl for the egg whites, so they whip well and become fluffy. Use an electric mixer to beat the egg whites until you achieve a firm and shiny foam. Once you succeed, set them aside and focus on the yolks. In another bowl, add the yolks along with the sugar and the soft butter, cut into cubes. Mix them well until you obtain a creamy composition of an intense yellow color. Then, add the ricotta cheese, which will give the cake a fine texture and delicious filling. Continue mixing until the ricotta is fully incorporated and there are no lumps. Now, it is time to add the dry ingredients. Sift the flour together with the baking powder and vanilla sugar into a separate bowl. This step is important to avoid lumps in the batter. Incorporate the flour mixture into the yolk composition, gently mixing with a spatula. Then, gradually add the milk, continuing to mix until you achieve a homogeneous batter, with the consistency of thicker sour cream. Prepare a 26 cm mold by greasing it with butter and lining it with sugar, to give the cake a caramelized crust that will add a special flavor. Pour the mixture into the prepared mold and level the surface with a spatula, ensuring it is evenly distributed. Preheat the oven to 180 degrees Celsius. Once the oven is well heated, place the mold with the cake inside and let it bake for about 30 minutes. However, for some, like my oven, it may take 45 minutes. Check the cake using a toothpick; if it comes out clean, the cake is ready. After baking, remove the cake from the oven and let it cool in the mold. Once it has completely cooled, sprinkle powdered sugar on top for an elegant look and an extra touch of sweetness. Served alongside a cup of hot coffee, this ricotta cake will surely become a favorite, ideal for a relaxing afternoon or at a gathering with friends. Enjoy every bite!
