In a non-stick pan, heat the dry spices over medium heat: coriander, cumin, cloves, cinnamon, cardamom, and mustard seeds. Stir constantly for about 3 minutes until the spices release their aromas and the mustard seeds begin to pop. Once cooled, transfer the spices to a grinder and turn them into a fine powder that will enrich the dish with warm and spicy notes. For the sauce, heat oil in a pan. The resulting sauce will be rich and will coat the potatoes with a layer of flavor. Once the sauce is ready, pour it warm over the drained potatoes and gently mix to blend the flavors.
