Candied Citrus Peels

To prepare a delicious candied citrus peel recipe, it is essential to follow each step carefully to achieve a perfect result. We start by choosing fresh citrus fruits, such as lemons, oranges, or grapefruits, as their peels will provide the intense flavor we are looking for. The first step is to scrub the citrus peels very well with a new sponge under warm water to remove any impurities and wax. It is important to clean the peel, including the white part, as this can influence the final taste with its bitterness. Once we have clean peels, we cut them into thin strips, ensuring they are uniformly sized for even drying. The next step is to blanch the peels for a few seconds, after which we rinse them with cold water. This process is repeated 2-3 times to eliminate the specific bitter taste of citrus peels. Once we finish this process, we measure the obtained peels with a cup. The amount of peels will determine the proportions of water and sugar we will use for the simple syrup. Thus, for each cup of peels, we will use as many cups of water and as many cups of sugar. After we have prepared these ingredients, we put the mixture on the heat and let it boil. Once the syrup reaches the boiling point, we add the citrus peels and simmer them for 30 minutes. It is important to cover the pot to retain moisture and flavor. After this stage, we let the pot cool and sit in the cold until the next day, so the flavors blend perfectly. The next day, we take the pot out of the fridge and put it back on the heat, adding another cup of sugar. We simmer on low heat, stirring occasionally, until the peels become glossy and the syrup thickens. Once we achieve the desired consistency, we drain the peels from the excess syrup. Now comes an important step: we mix the peels with a little granulated sugar, which will give them a sweet and crunchy coating. To dry the peels, we spread them on a baking paper, ensuring they are well dispersed so they do not stick together. It is essential to stir them occasionally to promote even drying. In a few hours, the peels will harden, becoming a sweet and tangy treat, perfect for use in cakes, pastries, or as delicious snacks. These candied peels can be stored in an airtight container, making them an excellent choice for flavoring various culinary dishes.
