Golden milk with ginger and turmeric

Ingredients
- 500 ml whole milk
- 1 tsp finely grated fresh ginger
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/8 tsp black pepper
- 2 tsp honey
- 1/4 tsp vanilla extract
Preparation
1. Finely grate the ginger. In a small saucepan, whisk it with the turmeric, cinnamon, black pepper and 3 tbsp of the milk until you have a smooth, ochre paste. 2. Stir in the remaining 455 ml whole milk. Set the pan over low to medium heat and warm for 7 minutes, whisking often, until steaming and just beginning to tremble at the edges. Don’t let it boil. 3. Take the pan off the heat. Whisk in the honey and vanilla until the honey dissolves. 4. Pour into two mugs, giving the drink one last whisk as you pour.
Notes
Whole milk gives the drink a rounder body; 2% milk works too, but it will be thinner. Grate the ginger finely, especially if the root is fibrous, so you don’t wind up fishing strands out of the mug. Rinse the saucepan and whisk soon after pouring; turmeric clings once it dries. Cover leftovers and refrigerate for up to 3 days, then reheat gently and whisk until the spices are moving through the milk again. I serve it with plain toast or a lightly sweet biscuit. For a dairy-free version, use 500 ml unsweetened oat milk and replace the 2 tsp honey with 2 tsp maple syrup. As written, it contains dairy.
