To make blinis, start by dissolving the yeast in warm milk. Make sure the milk is not too hot, otherwise it will kill the yeast. After the yeast has completely dissolved, add the yolk and mix well. In another bowl, combine the buckwheat flour, salt, pepper, and white flour. The flour mixture is crucial for achieving the perfect texture of the blinis. After combining the dry ingredients, pour the milk and yolk mixture into the bowl with flour. Mix the two mixtures well, stirring with a spatula or whisk until you obtain a homogeneous batter, with a consistency slightly thicker than that of regular pancakes.
