Winter Salad

To obtain a delicious bean salad recipe with bacon and vegetables, it is important to prepare the ingredients carefully. We start with the beans, which should be boiled in advance. Choose white or red beans, depending on your preference, and then wash them well under cold running water. Place the beans in a large pot, add sliced carrots, celery, a whole onion, a few cloves of garlic, bay leaves, and enough water to cover the ingredients. Simmer on low heat for about 1-2 hours, or until the beans become tender. After cooking, drain the beans and keep the vegetables to use in soups or other dishes. The beans can be used immediately in the salad or portioned into bags and frozen for future use. While the beans are boiling, let's take care of the red onion. Slice the onion thinly and place it in a bowl. Sprinkle salt over it and season with freshly crushed coriander seeds. Pour balsamic vinegar over the onion and mix well. Let the mixture sit for about 30 minutes, during which the onion will soften and absorb the flavors, releasing its juice. In a pan, cut the bacon or smoked ham into thin strips and fry them over medium heat until crispy. Make sure to turn them frequently to cook evenly. Once the bacon is ready, drain the fat and place the strips on a paper towel to absorb excess fat. Meanwhile, cut the cucumbers and pickled peppers into small cubes. In a large bowl, mix the drained and still hot beans with salt, quality olive oil, and red wine vinegar. This combination will give the salad a rich flavor. Let the salad cool slightly, then add the pickles - cucumbers and pickled peppers - as well as the previously prepared balsamic onion. Mix well so that all the ingredients combine harmoniously. Finally, top with the crispy bacon strips and halved boiled eggs. Sprinkle freshly ground pepper and finely chopped green onion for an extra touch of freshness. The bean salad is now ready to be enjoyed, a hearty dish full of flavors that will delight any meal!
