To prepare a delicious steak in a pan and a side of pasta with vegetables, you don't need advanced cooking skills; all you need is a little patience and the willingness to experiment with flavors. We start with the steak, the ideal choice being pork neck or boneless chop, both having a juicy texture and rich flavor. Before you start cooking, make sure you have all the ingredients ready. The meat should be well-seasoned. You can salt it on both sides and let it absorb the flavors for a few minutes. In a pan with a lid, add a tablespoon of margarine, butter, or oil, depending on your preference. Once the fat is heated, add two finely chopped mushrooms and sauté them for 2-3 minutes over high heat. They will add an umami note to your steak. After the mushrooms have started to sauté, add the meat to the pan. It’s important not to move it too much to form a crispy crust. On the exposed side of the meat, sprinkle dried thyme, a little nutmeg, and a cube of brown sugar, which will help caramelize the meat. After you have flipped the meat, let it soak up the flavors from the pan. Add a teaspoon of sweet paprika and a little pepper, then put a few tablespoons of tomato sauce over each piece of meat. After pouring about 150 ml of red wine, cover the pan with a lid and reduce the heat. Let it simmer for 5-6 minutes, then turn the meat to cook evenly. Meanwhile, prepare the side dish. In a wok, add two tablespoons of margarine or oil and let it heat up. Add the onion and mushrooms with a pinch of salt, stirring occasionally. When the onion becomes transparent, add the chopped vegetables and sauté for 5 minutes, stirring from time to time. Add the cooked pasta and mix everything to combine the flavors. Sprinkle a little freshly ground pepper and adjust the salt to taste. When the steak is ready, serve it on a plate, covered with the sauce from the pan and alongside the pasta with vegetables. This dish is perfect for a savory dinner, and a glass of semi-dry red wine or rosé will perfectly complement the meal.
