Brussels Sprout Burgers, Potatoes and Chorizo

Wash the potatoes well and boil them in their skins, allowing them to cook for about 90%. It is important not to cook them completely, as we want to preserve their texture. Once they are almost cooked, drain them and let them cool. In the meantime, we will prepare the rest of the ingredients to create a delicious meal. Chorizo is one of the key ingredients in this recipe. Chop it finely and place it in a hot pan. Fry it until it becomes crispy and releases its intense flavors. Once fried, transfer it to a bowl and let it cool slightly. This step will add a deep flavor to our burgers, and the combination of chorizo and potatoes will delight the taste buds. Next, wash the Brussels sprouts, cut off the stems, and then halve them. Brussels sprouts are a wonderful vegetable, rich in nutrients, that will add a crunchy note and pleasant flavor to the dish. Put a cup of water in a pot and bring it to a boil. Once the water is boiling, add the Brussels sprouts and let them cook for 2 minutes. Then drain the sprouts and chop them finely, after which you will add them to the chorizo. Once the potatoes have cooled, peel them and grate them. This will make it easier to mix them with the other ingredients, giving them a soft and moldable texture. Add the grated potatoes to the mixture of Brussels sprouts and chorizo. Now is the time to add the remaining ingredients: your favorite spices, salt, pepper, and possibly a beaten egg to bind the mixture. Mix all the ingredients well until homogeneous. Then, portion the mixture and form burgers of the desired size. It is important to shape them well so that they hold their form during frying. Heat a pan with olive oil and fry the burgers until golden and crispy on the outside. They can be served alongside a fresh salad or your favorite side dish, adding extra flavor and freshness.
