Mushroom pasta with oven-baked chicken legs

Meat - Mushroom pasta with oven-baked chicken legs by Alberta A. - Recipia

Mushroom pasta with oven-baked chicken legs brings together creamy pasta, tender mushrooms and browned chicken legs marinated in yogurt and curry. Cream and a little pasta water bring the sauce together, while smoked cheese and Greek basil give it an aromatic finish. I serve it with a green salad for something crisp alongside the sauce. Prep: 20 minutes. Cook: 95 minutes. Rest: 240 minutes. Total time: 355 minutes. Serves: 6. About 710 kcal and 42 g protein per serving.

Ingredients

For the chicken legs

  • 6 bone-in chicken legs
  • 2 tablespoons sweet and hot paprika
  • 2 tablespoons curry powder
  • 45 ml soy sauce
  • 250 ml yogurt

For the pasta

  • 500 g Barilla pasta
  • 4000 ml water
  • 12 g salt
  • 500 g fresh mushrooms
  • 15 ml white truffle oil
  • 2 garlic cloves
  • 1 chili pepper
  • 1.5 g salt
  • 1 teaspoon curry powder
  • 200 ml cream (20% fat)
  • 50 g smoked cheese
  • 5 g Greek basil

Preparation

1. Pat the chicken legs dry with paper towels and remove the skin. Mix the yogurt with the soy sauce, paprika and 2 tablespoons of curry, then put the chicken in the marinade and refrigerate for 4 hours. 2. Preheat the oven to 170°C. Put the chicken legs and all the marinade in a baking dish and roast for 75 minutes, until browned and the juices near the bone run clear. 3. Bring 4000 ml of water and 12 g of salt to a boil. Cook the pasta for 10 minutes, until al dente, then reserve 240 ml of the cooking water and drain. 4. Cut the mushrooms into thick slices, and chop the garlic and chili pepper. Heat the white truffle oil in a large skillet, add the mushrooms, garlic and chili and cook for 8 minutes, until the mushrooms are tender. Stir in 1 teaspoon of curry and 1.5 g of salt. 5. Add the pasta to the mushrooms. Take the cream out of the fridge 15 minutes beforehand, stir a few spoonfuls of the hot mixture into it, then pour it into the pan with 100 ml of the reserved water. Heat everything over low heat for 2 minutes, until the sauce clings to the pasta. 6. Turn off the heat and grate the smoked cheese over the top. Add the Greek basil leaves and serve the pasta with the chicken legs.

Notes

I serve a green salad on the side; it brings to mind everyday chicken pasta, with the chicken legs browned separately. The dish keeps in a covered container in the fridge for up to 3 days; when reheating, a tablespoon of water per serving thins the sauce. White truffle oil can be replaced with 15 ml of olive oil for a subtler flavor. The pasta contains gluten, and the sauce contains dairy, with soy from the marinade. Very large chicken legs may need another 10 minutes in the oven; check that they’re cooked through near the bone. Choose firm mushrooms with dry caps; if you rinse them, dry them well before slicing. If the pan is filled to the top, the mushrooms release liquid and take longer to cook, so use a large one. Soy sauce can be salty, so taste the mushrooms before adding more salt.

Frequently asked questions

Can I use chicken breast instead of the legs?

Yes, use 6 chicken breast halves, about 900 g in total, and bake them at 200°C for 22-25 minutes, until cooked through.

Which pasta shapes hold the sauce well?

Penne rigate and fusilli hold the sauce well. Cook them for 1 minute less than the time on the package.

What can I use instead of smoked cheese?

Grate 40 g of smoked scamorza over the pasta after turning off the heat.

Can I replace the fresh chili pepper?

Yes, use 1/4 teaspoon of chili flakes and add them to the pan with the garlic.
