To prepare this delicious heart-shaped cake, you will need a round cake pan with a diameter of 24 cm that can be opened. Although the provided recipe may seem quite complex, I assure you that the final result is worth the effort. We start by making a dough from which we will cut out the hearts. You can use 2 eggs to make enough dough for a 24 cm cake pan, but in my recipe, I used 3 eggs, and the surplus dough can be used for other decorations or snacks. The first step is to preheat the oven to 180°C. In a large bowl, beat the eggs together with the oil, yogurt, and ricotta until you obtain a homogeneous mixture. Then, incorporate the flour mixed with baking powder. It is important to mix well so that the ingredients are completely integrated. To give a splash of color and a pleasant taste to the dough, add a tablespoon of tomato concentrate, which will provide not only the desired hue but also a subtle flavor. Once the mixture is ready, spread it evenly in a 22*30 cm baking pan lined with parchment paper. Bake the base in the preheated oven for about 15-20 minutes, or until a toothpick inserted in the middle comes out clean. Once the base is baked, remove the pan from the oven and let it cool. While the dough cools, you can prepare the filling. This is a Bilbolbul made with yogurt, and I decided to add an egg to give it a better texture. In a 250 ml glass, measure the liquid ingredients, mixing them well before adding the solid ingredients. Use a mixer to obtain a fine and uniform composition. For assembly, cut the colored base into heart shapes using a cookie cutter. Place the hearts around the edges of the cake pan, making sure to secure them well. If you want to decorate the cake, arrange the hearts with the tip facing up to achieve an elegant look. Don’t forget to moisten the parchment paper or grease it with a little oil to ensure the hearts stick well to the edges. After placing the hearts, pour the cocoa dough into the pan, making sure it reaches behind the hearts to secure them. Bake the cake in the oven at 180°C for 35-40 minutes or until a toothpick comes out clean. After baking, let the cake cool on a rack. If you want to decorate it, you can use 100 g of fresh whipped cream, which you can apply to the cake using a pastry bag or even a bag with a cut tip. For a special look, sprinkle 2-3 tablespoons of unsweetened cocoa powder on top. This cake will surely become the star of any event, and your effort will be rewarded with applause!
