Ring-shaped pasta soup

Soups - Ring-shaped pasta soup by Adriana K. - Recipia

Ring-shaped pasta soup is served hot, with the vegetables and pasta cooked right in the broth. The carrots, celeriac, parsnip and onion give it a slightly sweet flavor, while the rings make it heartier, with little pieces of root vegetables in every spoonful. I like it best when the rings are still slightly firm. Prep: 15 minutes. Cook: 25 minutes. Total time: 40 minutes. Serves: 4. Approximately 290 kcal and 6 g protein per serving.

Ingredients

  • 4 large carrots (400 g)
  • 1 medium onion (150 g)
  • 3 tablespoons olive oil
  • 1 large parsnip (200 g)
  • 1 small celeriac (300 g)
  • 2000 ml still water
  • 2 tablespoons dried vegetables
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 100 g egg pasta (rings)
  • 15 g fresh parsley

Preparation

1. Peel the carrots, onion, parsnip and celeriac, then rinse them under cold running water. Cut the carrots into sticks, and the parsnip and celeriac into bite-sized pieces. 2. Put 2000 ml of water and 3 tablespoons of olive oil in a pot over medium heat. Add the whole onion and the other vegetables; cook for 20 minutes, until softened. 3. Remove the onion. Add the dried vegetables, 1 teaspoon of salt, 1/2 teaspoon of ground pepper and the pasta. Cook for 5 minutes, until the rings are tender but still hold their shape. 4. Turn off the heat, sprinkle with the chopped fresh parsley and serve the soup hot.

Notes

In a covered container, the soup keeps in the fridge for up to 3 days; the pasta swells and the broth thickens. For a gluten-free version, use 100 g of corn- or rice-flour rings and check the label, since regular pasta contains gluten and egg. I serve it with toast and cook it close to mealtime so the rings don't sit in the broth for long. Choose firm carrots without soft spots, and cut them into sticks of similar thickness. If the parsnip has a woody core, remove it before cooking. Taste the dried vegetables before adjusting the salt, since some mixes are already salted.

Frequently asked questions

Can I use celery instead of celeriac?

Yes, you can use 2 celery stalks, about 100 g, instead of celeriac. Cut them into short pieces.

How do I keep the broth clearer?

Cook the pasta separately in 1000 ml of water for 5 minutes, drain it and put it in the bowls before ladling in the soup.

What should I do if the root vegetables are still firm?

Cut the parsnip and celeriac into pieces about 2 cm across. If they're still firm after 20 minutes, cook the soup for another 5 minutes before adding the pasta.
