Rice pudding with milk and raisins

Sometimes, when I crave something sweet that doesn't take much effort, I make rice with milk and raisins. I usually prepare it in a multicooker, especially when I have fresh goat milk in the fridge. This recipe is requested by Rebeca and has already become a regular in my collection of simple homemade desserts. I measure the rice with a smaller cup and put it directly into the multicooker pot, without rinsing it further if it's good round grain. 2. I pour the milk over the rice, add the sugar, and stir gently, just enough so the rice doesn't stick to the edges. 3. I start the multicooker and choose one of the three rice functions; I always use the PILAF function. This takes about 40-50 minutes in my case. 4. About 5 minutes before the program ends, I add the lemon zest and put the raisins directly into the pot. I stir briefly to distribute. 5. When the program ends, I can serve the dessert warm, but it's also good cold. Depending on preference, it can be left to cool in the pot or served immediately in bowls. Why I make this recipe often It doesn't need supervision, the ingredients are simple and inexpensive, and the result remains just as tasty the next day. You can easily adjust the amount of sugar or add other dried fruits if you're in the mood for a different flavor. Tips and variations Tips If you want a creamier texture, you can let the milk reduce less and serve immediately. Raisins can be soaked beforehand, but it's not necessary in the multicooker. For a more intense lemon flavor, add a bit of juice, not just the zest. Substitutions Goat milk can be replaced with cow's milk or plant-based milk, but the taste will be different. You can use any type of round-grain rice. White sugar can be substituted with brown sugar or another sweetener, to taste. Variations You can add dried fruits instead of raisins, possibly cranberries, apricots, or dried cherries, following the same principle. If you want a more aromatic dessert, mix in a bit of vanilla at the end. When serving, you can sprinkle a little cinnamon on top. Serving ideas You can eat it plain, warm or cold, directly from the bowl. It also works well as breakfast, not just as a dessert, if you make it less sweet. Frequently asked questions Can I use a different type of rice? Yes, but round-grain rice gives the best creamy consistency. Long-grain rice doesn't absorb the milk as well. Do I need to rinse the rice beforehand? It's not strictly necessary, especially if you use quality rice. If you rinse it, the texture may turn out less cohesive. What can I do if the milk boils over? In a multicooker, this rarely happens, but if cooking on the stove, keep the heat low and watch towards the end. Can I replace raisins with something else? Yes, any dried or candied fruits work just as well. Can it be made without sugar? Yes, but the dessert won't taste as good. You can reduce the amount or use a sweetener to taste. Storage and reheating It can be stored in the fridge, covered, for up to 2 days. When you want to reheat it, add a few tablespoons of cold milk and heat it on low or in the microwave, stirring occasionally. The texture may become denser when cold, but it returns after adding milk. If not consumed within 2 days, the texture begins to change and it won't taste as fresh.
Preparation
We put the rice in the cooker pot, add the sugar and milk, and choose one of the 3 functions for rice from the menu (I chose, again, the PILAF function). 5 minutes before the program ends, we flavor it with lemon zest and add the raisins. It can be served hot or cold, either way, it's really good!!! Enjoy your meal! Any kind of dried fruits can be used.
