While the potatoes are cooling, you can start on the filling. In a food processor, add the two types of cheese: cottage cheese, which is creamy and delicate, and cheddar cheese, which will add a note of intensity. Add salt and pepper to taste, but remember that the cheese may already be salty, so be careful not to overdo it. Then, add the grated parmesan, which will provide a crunchy texture and a deep flavor to the filling. To enhance the taste, you can also add some fresh herbs, such as dill or parsley, which will bring a note of freshness. Mix the ingredients in the processor until you achieve a homogeneous composition, but do not turn everything into a fine paste; it is good to leave some cheese pieces for an interesting texture. After the potatoes have cooled sufficiently, carefully peel them. Use a sharp knife to cut them in half lengthwise, being careful not to damage them. With a spoon, carefully remove some of the potato flesh, leaving a small margin of about 1 cm to maintain the shape. The removed flesh can be added to the cheese filling for extra flavor. Fill each half of the potato with the cheese mixture, sprinkling a bit of grated cheese or breadcrumbs on top to achieve a crunchy crust. Place the stuffed potatoes in a baking dish greased with a little olive oil and bake them in a preheated oven at 180 degrees Celsius for about 20-25 minutes. When you notice that the cheese on top has melted and has taken on a golden hue, they are ready to be enjoyed. Serve them hot, alongside a fresh salad or a garlic yogurt sauce, which will perfectly complement the flavor of the stuffed potatoes.
