Turkish Cookies

The filling is an essential element of this delicious recipe, so it is important to ensure that the combination of jam and nuts is perfectly balanced. In a bowl, mix the chosen jam or jelly well, preferably one made from berries or apricots, with a generous amount of ground nuts. This combination should become a thick paste that provides a rich flavor and pleasant texture. Once you have the filling, set it aside to let the flavors blend. For the dough, prepare your ingredients: powdered sugar, vanilla sugar, yogurt, and margarine should be at room temperature. In a large bowl, combine the powdered sugar and vanilla sugar with the yogurt, mixing well with a wooden spoon until homogeneous. Then, add the melted margarine, mixing again. Sift the flour together with the baking powder over the wet mixture and start to gently mix with the spoon. When the dough begins to come together, switch to kneading, but don't overdo it; you want to achieve a slightly soft and slightly sticky dough ball. Once the dough is ready, portion it into small pieces, about the size of a golf ball, and shape them by hand into round forms. Then, take each ball and gently flatten it with your fingers, forming a round sheet about 0.5 cm thick. Use a cookie cutter to cut out these shapes, ensuring you have enough pieces to create filled sandwiches. On each cut-out shape, add ½ - 1 teaspoon of the nut and jam filling, then cover with another piece of dough, gently pressing the edges to seal them. Place these delights on a tray lined with parchment paper. For a more appealing look, brush the surface with a beaten egg yolk and, if desired, sprinkle with sesame or poppy seeds for added texture. Preheat the oven to 175 degrees Celsius and place the tray with cookies inside. Bake for 25-30 minutes, or until they become slightly golden on the bottom. Once you take them out of the oven, let them cool on a rack. Finally, dust them with powdered vanilla sugar to give them a sweet and elegant touch. These cookies with jam and nut filling are ideal to be served at a festive meal or simply as a treat with tea. Enjoy them with pleasure!
