We choose ripe, meaty tomatoes, which we easily peel using a simple method: we quickly dip them in boiling water for a few seconds, then immediately transfer them to a bowl of cold water. This way, the skin comes off effortlessly. After peeling them, we cut them into small cubes, being careful to remove the seeds, so as not to dilute the sauce. In a pot, we put the tomato cubes together with the juice left from the roasted peppers and add a teaspoon of sugar, which will help balance the acidity of the tomatoes. We bring the mixture to a low heat, stirring occasionally, and let it simmer until the tomatoes become soft and the juice reduces, creating a dense and flavorful texture. Finally, we season with salt, freshly ground pepper, and dried oregano, adjusting the taste to personal preferences. After obtaining a delicious sauce, we take the pot off the heat and let it cool slightly. We incorporate the strips of peppers, add a generous handful of freshly chopped parsley, which will bring an extra freshness to the dish. We mix everything well and transfer the composition to an airtight container, leaving it in the refrigerator for at least an hour to allow the flavors to harmoniously blend. This dish can be served in multiple ways. A simple option is to enjoy it cold, alongside a slice of fresh bread, perfect for dipping into the flavorful sauce. In the warm version, we can opt for a portion of steaming polenta, accompanied by a fragrant garlic sauce, which will further enhance the taste.
