When the egg whites become firm and glossy, we start gradually adding the contents of the two packets of whipped cream. It is essential to mix constantly, using a spatula or a mixer on low speed, until we achieve a consistent whipped cream that does not fall. Separately, in a large bowl, we mix the mascarpone cheese with granulated sugar, egg yolks, vanilla sugar, and rum essence. It is important to mix until the sugar completely dissolves and the cream becomes smooth and creamy. The next step is to combine the two mixtures: the whipped cream and the mascarpone cream, being careful to incorporate them with gentle, up-and-down movements to maintain the airiness of the mixture. Once we have obtained a fine cream, we set the mixture aside and take care of the coffee. We prepare the cooled and unsweetened coffee, which can be obtained either through a filter, a cezve, or an espresso machine, depending on personal preferences. This will be the base for soaking the ladyfingers. For assembling the tiramisu, we choose a rectangular dish, such as a glass or ceramic dish. We begin to 'assemble' the tiramisu: take a ladyfinger and quickly dip it in the coffee, being careful not to leave it too long to avoid breaking. We place the ladyfingers at the bottom of the dish, covering the entire surface. Over this first layer of ladyfingers, we pour about a third of the mascarpone cream, spreading it evenly. We proceed in the same way, alternating layers of ladyfingers and cream until we finish the ingredients. It is important that the last layer is cream, which we can decorate with plenty of grated dark chocolate for added flavor and appearance. After we have finished assembling, the tiramisu is transferred to the refrigerator, where it will sit for 4-5 hours. This resting time is essential for the cream to set and the coffee flavors to blend perfectly with the other ingredients.
