Accordion potatoes with homemade sausages, baked I have made accordion potatoes in the oven a few times, but this time I wanted to test them with thin slices of homemade sausages. It seemed like a good idea, especially since I had the sausages ready in the fridge. Everything went quite quickly, and the combination of baked potatoes with sausages is clearly practical when you don't feel like complicated menus. Quick info Total time: about 1 hour Preparation time: 15 minutes Baking time: 40-50 minutes (of which 40 minutes covered, the last 10 without foil) Servings: 3-4 Difficulty: easy Main dish, suitable for lunch or dinner Ingredients 1 kg potatoes (choose medium-sized ones that can fit slices of sausage) 1 piece of homemade sausage, about 250 g 2-3 cloves of garlic 50 ml oil salt pepper paprika vegetable seasoning (optional) 200 ml water Preparation method 1. Peel the potatoes and wash them well. Dry them gently with a towel. 2. Cut each potato into thin slices, but not completely – they should remain whole at the base, so you can insert the sausage slices. The easiest way is to support the potato on two skewers so you don’t cut all the way through. 3. Slice the homemade sausage as thinly as you can. It doesn’t have to be perfect, just fit between the potato slices. 4. Take each potato and place a slice of sausage between the cut slices. Continue until you finish all the potatoes. 5. Place the stuffed potatoes in a heat-resistant dish. They don’t have to be perfectly arranged, just not overlapping. 6. Sprinkle salt, pepper, and paprika (to taste) and, if using, vegetable seasoning. 7. Pour the oil evenly over each potato. 8. Peel the garlic cloves and place them whole in the dish, among the potatoes. 9. Add 200 ml of water to the bottom of the dish. 10. Cover the dish with aluminum foil. 11. Place the dish in the preheated oven at 200 degrees. Bake for 40 minutes. 12. Remove the foil and let it bake for another 10 minutes to brown the potatoes on top. Check if they are done by piercing with a fork – they should be soft, and the sausages slightly browned. Why I make this recipe often This recipe is quick, almost cooks itself in the oven, and doesn’t dirty too many dishes. The accordion potatoes stuffed with sausages really fill you up and are suitable for any day when you have homemade sausages on hand. You can add other ingredients if you want, but this version is the simplest and tastiest. Tips and variations Tips 1. For slicing, use potatoes of similar size – they cook evenly. 2. If you want the slices to open better, you can brush with oil between the cuts. 3. You can adjust the spices to your preference, but don’t overdo it – the sausages already provide enough flavor. Substitutions 1. If you don’t have homemade sausages, you can use any other smoked or semi-smoked sausage. 2. You can leave out the vegetable seasoning if you prefer a simpler taste or want to control the salt more strictly. 3. For a pork-free version, use chicken or turkey sausages. Variations 1. You can alternate sausage slices with small pieces of bacon or even chicken breast if you want to vary. 2. You can also add vegetables between the potato slices: bell peppers, onions, or thinly sliced mushrooms. Serving ideas These potatoes go well with any simple seasonal salad or pickles. They are filling enough to be a main dish, but you can also serve them on a platter at a meal with multiple courses. Frequently asked questions 1. What type of potatoes are best suited? White potatoes with thin skins and a floury texture cook faster and absorb flavors better. 2. Can I use new potatoes? You can, but you have to be careful with the baking time – they might soften faster. 3. How thin should the sausage slices be? Thin enough to fit between the potato slices without forcing. If they are too thick, the potatoes won’t “open” while baking. 4. Can the recipe be made without aluminum foil? You can try, but you risk the top drying out before the center is cooked. The foil helps with even cooking. 5. Can the dish be frozen after baking? I do not recommend it; the texture of the baked potato does not hold up well after freezing. Nutritional values Approximately, for a medium serving (out of four total servings): Energy: 350-400 kcal Protein: 8-10 g Fat: 18-20 g (from oil and sausages) Carbohydrates: 40-45 g Values are approximate and may vary depending on the type of sausage and how much oil you use. Storage and reheating The dish lasts in the fridge for 1-2 days, in a closed container. For reheating, it’s best in the oven or in a pan, but the texture will not be as good as when fresh. I do not recommend keeping it longer, as the sausage slices and potatoes can release water and become mushy.

Preparation

I cleaned the potatoes and washed them well, sliced the sausage thinly, scored the potatoes, then placed a slice of sausage between each slice of potato. I repeated the process until I finished the potatoes, then arranged them in a tray, salted and seasoned them, poured oil over each potato, added 200 ml of water and the garlic cloves, then covered with foil. I placed the tray in a preheated oven at 200 degrees and left it for 40 minutes. Ten minutes before finishing, I removed the foil to let them brown nicely. It’s a very tasty main dish, great with a salad or pickles on the side, they are super, super good. Enjoy your meal! I highly recommend them. A very tasty main dish, they also go well with pieces of bacon and chicken breast alternately. Salad or pickles are a must.
