Fried Rice with Pineapple (boluo Fan)

1. We start by washing the pineapple well under a stream of cold water, making sure to remove any impurities from its skin. Then, we cut a little off the bottom of the pineapple to stabilize it, after which we place it vertically. Using a sharp knife, we cut a quarter off the top of the pineapple, being careful not to pierce the skin. Inside, we use a knife to score the flesh of the pineapple into rectangular shapes, making it easier to scoop out with a spoon. The obtained pulp is placed in a bowl with slightly salted water to keep the fresh taste. 2. In a pot, we pour an appropriate amount of water and put it on the heat. Once the water starts to boil, we add the peas and let them boil for two minutes. After this interval, we remove the peas with a slotted spoon and place them in a bowl. 3. We continue by cutting the carrot, ham, and onion into cubes the size of a pea, ensuring that all ingredients are cut evenly for even cooking. 4. From the pineapple pulp, we select 100 grams, which we cut into small pieces, adding a sweet note to our dish. 5. In a frying pan, we pour an appropriate amount of oil and wait for it to heat up. When the oil is ready, we add the beaten egg, letting it cook, and once it is cooked, we remove the omelet to a bowl. 6. We reintroduce a little oil into the frying pan and add the peas, carrot cubes, and onion. We let them fry together for a few minutes, stirring constantly to avoid burning. 7. Now, we add the rice to the pan, pressing with a spatula to ensure the grains separate and the ingredients blend perfectly. 8. The next step is to add the ham cubes, mixing well to incorporate them into the mixture. 9. Finally, we put the pieces of pineapple and the omelet into the pan, season with salt, and carefully mix everything. Once the ingredients are well combined, we turn off the heat and take care of the pineapple shell. We fill it with the sautéed rice, presenting it as a delicious and attractive dish. This dish, besides being tasty, is also aesthetic, having a pleasant contrast of colors. The sweet-sour taste of the pineapple makes the recipe truly special. If you prefer, you can adapt the combination of ingredients according to personal preferences. It is important that the rice is cooked a day in advance, to dry out a little and not be too wet, which could affect the final texture of the dish. Therefore, I invite you to try this recipe, which will bring a touch of exoticism and flavor to your table!
