CELERY (Apium graveolens dulce) WITH CARROTS

Diverse - CELERY (Apium graveolens dulce) WITH CARROTS by Zamfira M. - Recipia

This recipe is inspired by the Bergamasque cuisine of Italy, where rich flavors and fresh ingredients come together perfectly to create delicious dishes. We will prepare a vegetable sauce, which can be used as a base for pasta, pizza, or even as a side dish for meat. The first step is to clean the onion, carrots, and celery. These vegetables will form the aromatic base of our sauce. After cleaning them, we wash them well under a stream of cold water, ensuring that we remove any impurities. Then, the onion is finely chopped, while the carrots and celery are diced into approximately equal-sized cubes for even cooking. The tomatoes are washed and cut in half or quarters, depending on their size. In a large pot, we add a few tablespoons of extra virgin olive oil, which will add a special flavor to the sauce. We heat it over medium heat and add the chopped onion. We let it sauté for a few minutes until it becomes translucent and starts to turn slightly golden. Then, we add the carrots and celery, continuing to sauté the vegetables for about 5-7 minutes, stirring occasionally. Once the vegetables have softened, we add the chopped tomatoes and mix well. It’s time to add the spices: salt, pepper, and optionally, a little dried oregano to enhance the flavor. We cover the pot with a lid and let the sauce simmer on low heat for about 20-30 minutes. It is important to stir occasionally to prevent sticking. As the sauce simmers, the flavors will combine, and the vegetables will transform into a delicious and hearty composition. At the end, we can add a few fresh basil leaves or chopped parsley, which will provide a fresh and vibrant note to our dish. The sauce is now ready to be used! It can be served over al dente pasta or as a filling for pizza. It can also be used as a side dish alongside grilled or baked meat. This vegetable sauce is not only tasty but also healthy, providing a good portion of vitamins and nutrients. Enjoy your dish, inspired by Bergamasque traditions, and savor every bite!
