Polenta with Four Types of Cheese

To prepare a traditional delight, we will start by dividing the cottage cheese into three separate bowls. Each bowl will receive the ingredients that will add flavor and texture to the cheese. In the first bowl, add finely chopped onion, preferably a sweet onion, which will provide a subtle hint of flavor. Mix well so that the onion integrates perfectly into the cottage cheese. In the second bowl, add finely chopped green parsley, which will bring an extra freshness and color to the dish. Mix again, ensuring that the parsley is evenly distributed. In the last bowl, add tomato paste, which will give a slightly tangy taste and a pleasant hue to the dish. Blend each mixture well, making sure to achieve a fine and uniform texture. Next, we will prepare the base of this dish, polenta. Boil water in a large pot and add a pinch of salt. When the water reaches a boiling point, start adding the cornmeal in a rain-like manner, stirring continuously to avoid lumps. Cook the polenta over low heat, stirring constantly, until it becomes thick and pulls away from the sides of the pot. Once the polenta is ready, take a heat-resistant dish and generously grease it with butter. Spread an even layer of polenta on the bottom of the dish and level it with a spatula. Now, creatively divide the surface of the polenta into four quarters. In each quarter, add a different type of cheese prepared earlier. In the first quarter, place the onion mixture, in the second, the parsley mixture, and in the third quarter, the tomato paste combination. Don't forget to add grated cheese, which will bring a special creaminess. Cover everything with another layer of polenta, taking care to smooth the surface. Finally, generously sprinkle grated cheese on top to achieve a golden and appetizing crust. Place the dish in a preheated oven at a moderate temperature. Cook the dish for about 15 minutes or until the cheese on top melts and forms a delicious crust. When ready, take the dish out of the oven and let it cool slightly. Portion the dish onto plates and serve it warm, alongside a cup of sour milk, whether yogurt, kefir, or buttermilk, according to preference.
