Total preparation time: 2 hours Baking time: 40-45 minutes Resting time: 1 hour Number of servings: 12 Ingredients for the dough: - 500 g high-quality flour (preferably type 650) - 250 ml milk - 100 g sugar (you can adjust the amount according to your preferences) - 25 g fresh yeast (or 10 g dry yeast) - 3 egg yolks - 1 pinch of salt - 100 ml oil (or melted butter for a richer taste) - Grated zest from 1 lemon (optional, for extra flavor) Fillings: 1. Nut filling - 200 g ground walnuts - 100 g sugar - 1 teaspoon vanilla essence - Milk, as needed, to obtain a paste 2. Cocoa filling - 50 g cocoa - 100 g sugar - 100 g butter (or margarine), melted - 100 ml milk 3. Jam filling (plum, apricot, or any other preferred jam) Instructions: 1. Start by preparing the dough. In a saucepan, heat the milk with the sugar until it becomes warm, then let it cool slightly. Add the yeast and gently mix to dissolve it. Let the mixture sit for 10 minutes until it becomes frothy. 2. In a large bowl, sift the flour and add the salt and lemon zest. Make a well in the center and pour in the milk-yeast mixture. Add the egg yolks and oil (or melted butter). Mix the ingredients well with a spatula or your hands until you obtain a homogeneous dough. 3. Knead the dough for about 10 minutes until it becomes elastic and no longer sticks to your hands. Cover it with a clean towel and let it rise in a warm place for 1 hour, or until it doubles in volume. 4. Meanwhile, prepare the fillings. For the nut filling, mix the ground walnuts with sugar and vanilla essence, adding milk gradually to obtain a paste. For the cocoa filling, combine the cocoa with sugar, melted butter, and milk, mixing well. 5. Once the dough has risen, turn it out onto a floured surface and divide it into three equal parts. Roll each piece into rectangles about 1 cm thick. 6. Spread each rectangle with the chosen filling (nuts, cocoa, or jam) and carefully roll it up. Place the rolls in a tray, leaving a small space between them to allow for rising. 7. Let the cake rise again for 20-30 minutes, then brush the surface with a beaten egg to achieve a golden and glossy crust. 8. Preheat the oven to 180°C and bake the cake for 40-45 minutes or until golden and a knife inserted in the center comes out clean. Serving suggestion: You can sprinkle a little powdered sugar on top before serving for an elegant look. This festive cake pairs perfectly with a cup of tea or coffee. With this festive cake recipe with three fillings, you will bring a touch of magic to every meal. Enjoy every bite and cherish the moments spent with your loved ones!
Preparation
I boiled the milk with sugar, let it cool a bit, and dissolved the yeast. I sifted the flour, added the egg yolks and salt. I incorporated the yeast, 50 g of margarine, vanilla, and lemon zest. I gradually added the rest of the margarine and kneaded for 25-30 minutes, then let it rise for an hour. FILLING: I whipped the egg whites with a pinch of salt and sugar, added walnuts, vanilla, lemon zest, orange zest, and rum. I cut the Turkish delight into slices. I divided the dough into four. I lined the baking tray with paper, rolled out the first sheet, and spread it with jam (one jar of 400 g). I rolled out the second sheet, poured in the walnut filling. I rolled out the third sheet, spread it with the remaining jam, placed the Turkish delight, drizzled with juice from half a lemon, and sprinkled with walnuts. I rolled out the last sheet and pressed the edges gently. I brushed the cake with a beaten egg mixed with a tablespoon of sour cream. I sprinkled ground walnuts and baked it for 50 minutes (check with a toothpick). I let it cool for 15 minutes and trimmed the edges. Enjoy your meal!
