Preparation Time - Preparation time: 30 minutes - Baking time: 40 minutes - Total time: 1 hour and 10 minutes - Servings: 10-12 sfintisori Ingredients - 1 kg all-purpose flour - 200 g sugar - 1 teaspoon salt - 60 g fresh yeast - 330 ml whole milk - 160 ml buttermilk - 8 egg yolks (like gold) - Zest of one lemon - Zest of one orange - 2 packets of vanilla sugar - 1 vial of rum essence - 1 vial of vanilla essence (from Dr. Oetker) - 200 g melted butter (recommended Napolact) - 50 ml high-quality olive oil - Bee honey (preferably from a local producer) - Roasted and ground walnuts (for decoration) A Brief History Mucenici hold a profound significance in our culture. They symbolize sacrifice as well as patience. The tradition of making mucenici dates back centuries, associated with spring rituals and the celebration of martyrs. Over time, each family has added a personal touch to the recipe, adapting the ingredients and preparation methods. Preparation Instructions Step 1: Preparing the Starter 1. Scalding the flour: In a large bowl, place 100 g of flour and pour 200 ml of boiling milk over it. Stir quickly to achieve a smooth mixture. This step is essential for activating the gluten in the flour, which will give the sfintisori a fluffy texture. 2. Activating the yeast: In another bowl, crumble 60 g of fresh yeast with a teaspoon of sugar until it becomes liquid. Add the prepared starter and let it rise for 15 minutes in a warm place, covered with a towel. Step 2: Making the Dough 3. Mixing the ingredients: In a blender, combine the egg yolks, 200 g of sugar, melted butter (at room temperature), lemon and orange zest, vanilla sugar, essences, and the 330 ml of whole milk. Blend well until you achieve a smooth mixture. 4. Combining with the flour: Add the starter to the wet ingredient mixture, then gradually incorporate the sifted flour (sifted three times) along with 1 teaspoon of salt. Mix until homogeneous. Step 3: Kneading 5. Kneading the dough: Transfer the dough to a work surface and knead for about 10 minutes until it becomes elastic. Alternatively, you can use a bread machine, letting it knead for one hour. 6. Incorporating the oil: After one hour, remove the dough and pour 50 ml of oil underneath it. Fold it and gently slap it with the back of your hand until the oil is fully absorbed. Then, let it rise again for 20 minutes. Step 4: Shaping the Mucenici 7. Forming the mucenici: Once the dough has risen, divide it into small pieces, shape them into the figure 8 or spirals, and place them on a baking tray lined with parchment paper. Brush each mucenic with a beaten egg for a golden crust. 8. Second rise: Let the mucenici rise for 30 minutes, covered with a towel. Step 5: Baking 9. Baking the mucenici: Preheat the oven to 180°C. Bake the mucenici for 40 minutes, but do not open the oven in the first 25 minutes to prevent them from collapsing. Check them at the end; they should have a beautiful golden color. Step 6: Finishing 10. Glazing: After removing them from the oven, let them cool slightly on a rack. While they are still warm, generously brush them with bee honey and sprinkle roasted and ground walnuts on top. This will add a unique flavor and a crunchy texture. Practical Tip To achieve the fluffiest mucenici, make sure all ingredients are at room temperature. Additionally, if you desire a more intense flavor, you can add a splash of almond essence to the wet ingredient mixture. Frequently Asked Questions 1. Can I use dry yeast instead of fresh yeast? Yes, you can use dry yeast. An equivalent amount would be about 20 g of dry yeast. 2. How can I keep the mucenici fresh longer? You can store them in an airtight container at room temperature. If you want to keep them longer, you can freeze them. 3. What drinks pair well with mucenici? Mucenici pair perfectly with a warm herbal tea or mulled wine, considering their sweet notes. Possible Variations For a touch of originality, you can try adding raisins or pieces of candied fruit to the dough. You can also replace the honey with a caramel sauce for a more decadent version. Conclusion Making mucenici is not just a recipe; it’s a true tradition that connects us to our cultural roots. This symbolic dessert, with its enticing aroma and fluffy texture, is perfect for enjoying with loved ones. So, don’t hesitate to try this recipe and share the joy of making mucenici with family and friends! Enjoy!
