The fruit tart for March 1st is one of the recipes I return to almost every spring, especially when there are kids around and I need something simple, quick, and colorful. Preparing the base Carefully separate the eggs: egg whites in a large bowl, yolks separately. Whip the egg whites until stiff, add the vanilla sugar and the 4 tablespoons of granulated sugar gradually, until the mixture is shiny and firm. Mix the yolks with the baking powder just to combine, then add them to the egg whites along with the flour. Gently fold in with a spoon, from top to bottom, to avoid deflating the mixture. 2. Baking Pour the mixture into a greased tart pan (or lined with paper), leveling it out. Place it in the preheated oven at medium heat for about 15 minutes.
