Onion Bread

To prepare a delicious onion pie, we will start by cleaning and washing the fresh onions. After removing the skin, we slice them thinly, and then we will turn our attention to the dough. We will prepare a bread dough that will become the perfect base for our tasty filling. In a large bowl, we will mix 500 g of flour with a teaspoon of salt and a teaspoon of sugar. Then we add 25 g of fresh yeast crumbled and a tablespoon of olive oil. Gradually, we will pour in 150 ml of lukewarm water, stirring continuously until we obtain an elastic dough. Once we have the desired consistency, we will cover the bowl with a clean towel and let the dough rise for about 30 minutes in a warm place to grow and become fluffy. While we wait for the dough to rise, we can prepare the filling. In a heated pan, we will add two tablespoons of olive oil and, when it is hot, we will add the sliced onions. We will sauté them over medium heat, stirring occasionally, until they become soft and translucent. Then, we will add two tablespoons of tomato puree, along with our favorite spices: a few bay leaves, mustard seeds, and freshly ground pepper. Don’t forget to add a teaspoon of sugar, which will balance the acidity of the tomatoes. We mix the ingredients well and add about 100 ml of water, letting everything simmer for a few minutes until the sauce thickens. After we have obtained a flavorful filling, we let it cool slightly. After the dough has risen, we stretch it with slightly damp hands on a clean surface, forming a thin sheet. We place the dough in a greased baking dish, making sure to evenly cover the bottom. Using a fork, we prick the dough here and there to allow steam to escape during baking. We let the dough rest again for 30 minutes in a warm place to relax. Once the filling has cooled slightly, we pour it evenly over the dough, ensuring it is distributed evenly. Then we head to the oven, which we have preheated to 180-200 degrees Celsius. We bake the pie for about 25 minutes or until it is nicely browned, and a toothpick test in the center confirms it is baked. The pie can be served warm or cold, alongside a fresh salad or a yogurt sauce. Enjoy your meal!
