Chicken with spicy sauce

Spicy Chicken Drumsticks When I get a quick call that my friends are coming over and I don't have much time, spicy chicken drumsticks are a go-to solution for me. There's no need for complicated techniques or hard-to-find ingredients. I do everything quickly with what I have on hand, and the dish goes straight into the oven. The food processor saves me a lot of work, and the result is hearty and tasty. Quick Info Total time: about 1 hour Preparation time: 10-15 minutes Cooking time: 40-45 minutes (depending on the oven) Servings: 4-6 people Difficulty: easy Recipe type: main course, suitable for meals with friends or family Ingredients 12 fresh chicken drumsticks, washed and dried with paper towels 2 green garlic stalks a few sprigs of parsley 70 g tomatoes (I used frozen tomatoes) 50 g bell pepper salt, to taste pepper, to taste basil, to taste thyme, to taste tarragon, to taste rosemary, to taste hot paprika, to taste a little oil (for both the sauce and the baking tray) Preparation Method 1. Prepare the chicken drumsticks. Wash them well and dry with a paper towel, then set aside. 2. In a food processor, add the green garlic, parsley, tomatoes (if frozen, add them as is), bell pepper, salt, pepper, basil, thyme, tarragon, rosemary, and hot paprika. Add a little oil to help with blending. 3. Blend everything until you get a paste. It doesn't have to be completely smooth, but no large chunks should remain. 4. Place the drumsticks in a large bowl. Pour the paste over them and mix well with your hands (or a spatula) so that each piece of chicken is coated with sauce. 5. Prepare a baking tray and grease the bottom with a little oil. Arrange the drumsticks in the tray so they are not overlapping. 6. Dilute the remaining sauce in the bowl with a little water (just enough to thin it slightly) and pour it among the drumsticks to hydrate during baking. 7. Drizzle a little oil over the drumsticks to prevent them from drying out in the oven. 8. Place the tray in the preheated oven at medium temperature. If using an electric oven, choose the simple baking function, not convection. Let it bake for about 40-45 minutes. Halfway through, turn the drumsticks so they brown evenly on both sides. 9. Remove the tray from the oven when the chicken is cooked through and the sauce is not burnt. Why I Make This Recipe Often Because I don’t need many special ingredients and I don’t waste time on complicated steps. It’s a recipe I can prepare when unexpected guests arrive or when I need a quick and hearty dinner. I like that everything is done in one go, and the taste is balanced – spicy enough but not overwhelming. Tips and Variations Tips Don’t skip the step of drying the drumsticks – it helps create a better crust. If the processor doesn’t blend well at first, stop it and scrape the ingredients off the walls. Check halfway through the cooking time if the sauce isn’t reducing too much. If it seems too dry, add 1-2 tablespoons of water. Substitutes Instead of green garlic, you can use 2-3 cloves of dried garlic. If you don’t have frozen tomatoes, fresh or canned tomatoes (drained) work as well. The bell pepper can also be green or orange, depending on what you have on hand. Variations If you don’t want it spicy, use sweet paprika instead of hot. You can use whole thighs or wings, but adjust the cooking time. For a more Mediterranean flavor, increase the amount of rosemary and basil. Serving Ideas The simplest is with mashed potatoes with carrots – the mash absorbs the sauce well. It also goes well with a simple green salad or boiled rice if you want something lighter. Leftover sauce from the tray can be poured over the side dish. Frequently Asked Questions Can I use another part of the chicken, not just drumsticks? Yes, you can use whole thighs, wings, or chicken breast, but the cooking time may vary. If I don’t have a food processor, how can I make the sauce? The ingredients can be finely chopped with a knife and then mixed vigorously with oil, but the texture will be more rustic. How spicy is the sauce? The level of spiciness depends on how much hot paprika you use. You can easily control it by adding gradually to taste. Do I need to marinate the chicken beforehand? No, the recipe is designed to be quick. The sauce goes directly on the meat without extra marinating time. Can I omit some herbs? Yes, if you don’t have all the dried herbs on hand, it’s not a problem. The final taste will be different, but the recipe works. Nutritional Values Estimate for one serving (out of 6): approximately 320 kcal, 23 g protein, 22 g fat, 5-6 g carbohydrates. Values are approximate and depend on the size of the drumsticks and how much sauce remains at the end. Chicken meat is low in calories, while oil and vegetables contribute to the intake of fats and carbohydrates. Storage and Reheating The drumsticks can be stored in the fridge in a covered container for up to 2 days. They can be reheated in the microwave or in the oven at low temperature, covered with foil to prevent drying out. If there’s leftover sauce, pour it over the meat before reheating. The dish doesn’t store well for more days, as the sauce thickens and the meat can become slightly dry. It’s best eaten fresh.

Preparation

As I was saying, this recipe is very quick, so the food processor will be a great help because we mix all the ingredients, except for the chicken drumsticks, until they become a paste. We put this paste over our drumsticks, mix them well, and that's it. We place them in a tray where we put a little oil, dilute the remaining sauce in the bowl a bit, and put it among the chicken pieces. I add a little more oil over the drumsticks, so they don't come out dry, and ... into the oven with them!, at a not too high heat, so that neither the sauce nor the drumsticks burn. Halfway through the baking time, we turn them over, and it's done!! We prepare a mashed potato with carrots and a green salad on the side. Friends are ringing the doorbell, the beer is cold, it will be a perfect evening!! Enjoy your meal and have lots of fun!!
