Cookies with nuts on top

To make some delicious cookies, start by preparing the necessary ingredients. You will need 4 eggs, 200 g of sugar, 100 ml of oil, 1 packet of vanilla sugar, the grated zest of a lemon, 300 g of flour, and a walnut for decoration. Make sure all the ingredients are at room temperature for better mixing. In a large bowl, add the eggs along with the sugar. Use an electric mixer to beat these ingredients at medium speed until the sugar completely dissolves and the mixture becomes slightly frothy. This process will take about 5 minutes. Then add the oil, continuing to mix. The oil will give the cookies a soft and moist texture. Next, add the vanilla sugar and lemon zest, which will add a special aroma to the preparation. After incorporating all these liquid ingredients, start adding the flour. It is very important to add it gradually to prevent lumps from forming. Mix well after each addition, ensuring everything is well combined. In the end, you will obtain a fairly soft but homogeneous mixture. Prepare a baking tray lined with parchment paper. If you don’t have parchment paper, you can grease the tray with butter and sprinkle a little flour to prevent sticking. Use a teaspoon to scoop portions of the cookie mixture and place them on the tray, leaving about 5 cm of space between each mound, as they will spread during baking. After placing all the mounds on the tray, decorate each cookie with half a walnut. This detail will not only add a crunchy note but also an appetizing appearance. Preheat the oven to medium temperature and place the tray in the middle of the oven. Let the cookies bake for about 15-20 minutes until they turn golden. Once baked, let the cookies cool in the tray for a few minutes, then transfer them to a cooling rack. At this point, you can dust them with powdered sugar while they are still warm for a more attractive appearance. If you want to try a more decadent version, you can stick two cookies together with chocolate cream, leaving them without powdered sugar.
