Smoked pork hock and bean stew

Smoked pork hock and bean stew is usually served for lunch, with thick broth and tender chunks of meat. The beans are boiled first, then cooked in the multicooker with the hock and vegetables until the broth thickens; the tomato juice goes in near the end. I like plenty of broth in my bowl, not just beans and meat. Prep: 20 minutes. Cook: 97 minutes. Total time: 117 minutes. Serves: 4. About 580 kcal and 40 g protein per serving.
Ingredients
- 300 g dried beans
- 1500 ml water for boiling
- 500 ml warm water for rinsing
- 2 medium onions (300 g)
- 2 medium carrots (240 g)
- 1 medium red pepper (150 g)
- 1 medium green pepper (150 g)
- 1 large tomato (180 g)
- 1 smoked pork hock (800 g)
- 1500 ml water for cooking
- 1 teaspoon salt
- 100 ml tomato juice
- 15 g fresh dill
Preparation
1. Put the beans in the multicooker pot with 1500 ml water. Select MENU, the BOIL function, for 30 minutes, until the beans start to soften. 2. Drain the beans and rinse them with 500 ml warm water. 3. Peel and chop the onions, carrots, peppers and tomato. Put the vegetables in the pot and sauté on the FRY function for 12 minutes, until the onion is translucent. 4. Pat the hock dry with paper towels, clean it and cut it into pieces. Add it to the pot with the beans and 1500 ml water. 5. Select the BAKE function at 150°C for 55 minutes. After 45 minutes, add the salt and tomato juice, then let the program run for another 10 minutes, until the meat is tender. 6. Sprinkle with the chopped dill when the program ends.
Notes
Serve with pickles. Store in the fridge in a covered container for up to 3 days; add a little water when reheating if the broth has thickened. I start about two hours before lunch, so I have time to prep the vegetables and run both programs without rushing. Smoked hocks vary a lot in saltiness, so taste the broth before adding the whole teaspoon. Choose a hock with plenty of meat clearly attached to the bone; pieces with too much bone leave less meat on the plate.
Frequently asked questions
Can I use canned beans?
Yes. Use 700 g drained and rinsed beans, skip the 30-minute boil and reduce the added water to 1000 ml.
Why are the beans still hard?
Older beans take longer to soften. Soak them in cold water for 8-12 hours before boiling.
How big should the hock pieces be?
Cut them into pieces about 4-5 cm across, so they’re easy to serve.
