Romanian plăcințele with chicken and cheese

Romanian plăcințele with chicken and cheese are served hot as an appetizer, browned in a pan. Boiled chicken, finely grated kashkaval cheese and green onion tops are tucked into a soft yogurt dough that gets golden spots on both sides, while the filling stays sealed inside. Ingredients
For the filling
- 400 g chicken breast
- 1500 ml water
- 150 g kashkaval cheese
- 3 bunches green onions (green tops only)
For the dough
- 200 g yogurt 2.5%
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon sugar
- 150 g kashkaval cheese
- 275 g flour
For frying
- 2 tablespoons oil
Preparation
1. Put the chicken breast in 1500 ml water and simmer over low heat for 30-40 minutes, until fully cooked. Remove it from the water and let it cool for 20 minutes. 2. Cut the chicken into small pieces. Mix it with 150 g finely grated kashkaval cheese and the chopped green onion tops. 3. In a bowl, mix the yogurt with the salt, baking soda and sugar. Stir in 150 g finely grated kashkaval cheese and the flour, then knead until you have a soft dough. 4. Divide the dough into 4 equal portions. Roll each piece out, put the filling in the middle and bring the edges toward the center. 5. Flatten each plăcintă a little, then fry it in a ceramic frying pan in 2 tablespoons of oil, for 4 minutes on each side, until browned. Do the same with the rest.
Notes
You can replace the kashkaval with the same amount of gouda; the dough contains gluten, and the dish contains dairy. Thin green onion tops soften more easily in the filling than thick, fibrous ones. Keep the pan over medium heat, because high heat browns the dough before the middle has warmed through. I serve them with a tomato salad. Once cooled, they keep in the fridge for up to 3 days.
