Puff pastry parcels with pork, herbs and garlic

These puff pastry parcels with pork, herbs and garlic brown in two batches, 20-25 minutes per tray. The pork, potatoes, carrot and herbs sit inside a puffed pastry shell, crisp around the edges; the parcels can be served warm or cold, including at a picnic. I like changing the pattern of the slashes; this time I’m making them with a knife. Prep: 20 minutes. Cook: 60 minutes. Rest: 20 minutes. Total time: 1 hour and 40 minutes. Serves: 8. About 780 kcal and 22 g protein per serving.
Ingredients
- 800 g puff pastry (2 sheets of 400 g)
- 500 g ground pork
- 300 g potatoes
- 150 g carrot
- 15 g green onion tops
- 15 g green garlic leaves
- 15 g parsley
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon thyme
- 15 ml oil
- 2 eggs
Preparation
1. Leave the puff pastry to thaw at room temperature until pliable. 2. Peel the potatoes and put them through a meat grinder with the carrot and herbs. Mix with the ground pork, salt, pepper and thyme. 3. Heat the oil in a frying pan and cook the mixture for 15 minutes, until browned and no raw meat remains. 4. Leave the filling to cool for 20 minutes, then mix in one egg. 5. Beat the second egg. Unfold one sheet of pastry and cut it into large rectangles. Put filling on one half of each rectangle, score the other half with a knife, brush the edges with egg and fold over. Prepare the second sheet in the same way. 6. Arrange the parcels on two baking trays lined with parchment paper, leaving a little space between them. Brush with egg and bake one tray at a time in a preheated oven at 200°C for 20-25 minutes per tray, until golden.
Notes
The pork can be replaced with 500 g ground turkey; the puff pastry contains gluten, and the filling and top layer contain egg. Potatoes put through a grinder can release water, so squeeze them lightly before mixing. Choose meat with a little fat and bake the parcels close to the time you leave for the picnic, as the puff pastry softens if left covered. They keep in the fridge for up to 3 days; warm them in the oven for a few minutes. I serve them with a tomato and cucumber salad.
Frequently asked questions
Can the green garlic leaves be replaced?
Yes. Replace them with 1 garlic clove, finely chopped, and mix it into the filling.
What should I do if the filling seems watery?
Leave it in the pan for another 2-3 minutes, stirring, until no liquid collects.
Why do the parcels open up while baking?
Press the folded edges with the tines of a fork, to a width of about 1 cm.
