Rustic omelet with smoked pork belly

Smoked pork belly and sheep’s cheese give this rustic omelet a salty flavor, while the eggs cook slowly under a lid until they’re still soft. The green onion and red pointed pepper keep their shape among the eggs, while the cubes of sheep’s cheese soften in the heat; the rustic omelet with smoked pork belly and sheep’s cheese is served warm, with tomato and cucumber salad. I beat the eggs until fine bubbles appear, without trying to whip them into a thick foam. Preparation: 10 minutes. Cooking: 10 minutes. Total time: 20 minutes. Servings: 2. Approximately 400 kcal and 20 g protein per serving.
Ingredients
- 3 eggs
- 50 g smoked pork belly
- 2 green onions
- 1/2 red pointed pepper
- 1 tablespoon oil
- 50 g sheep’s cheese
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
For the salad
- 2 medium tomatoes (300 g)
- 1 medium cucumber (200 g)
- 1 green onion
- 1 teaspoon oil
- 1/4 teaspoon salt
Preparation
1. Cut the smoked pork belly into strips, chop the green onions and cut the red pointed pepper. Beat the eggs until frothy and cut the sheep’s cheese into small cubes. 2. Heat the oil in a frying pan and sauté the smoked pork belly with the onions and pepper for 4 minutes, until the vegetables soften and the pork belly is lightly browned. 3. Stir the salt and pepper into the eggs, then pour them into the pan and add the cheese. Cover and cook over low heat for 6 minutes, until the eggs have set. 4. For the salad, cut the tomatoes and cucumber, chop the green onion and mix them with the oil and salt. Serve the salad alongside the omelet.
Notes
You can replace the sheep’s cheese with 50 g cow’s milk telemea; the dish contains eggs and dairy. If the smoked pork belly is very salty, use half the measured salt for the eggs. A 20 cm pan keeps the omelet taller, while it cooks faster in a wider one. If the bottom browns before the middle sets, the heat is too high. Serve it with tomato and cucumber salad. Keep it in the fridge for up to 3 days.
